Trout from England’s Rainforest

The trout in our new recipe this month grow in the cool, clean, chalk streams that are so plentiful in the area around Tisbury; however these little rivers are some of the planet’s rarest habitats

A LOCAL SPECIALITY

Of the 260 true chalk streams on Earth, 224 of them run through the English countryside; in particular South Wiltshire, Hampshire and Dorset. They are so valuable & unique the World Wildlife Fund calls them “Englands Rainforest”
