Watercress Walk

Hippocrates the father of Western medicine referred to it as the “cure of all cures” so when he built the first hospital on the Greek island of Kos, it was alongside a stream where wild watercress grew.

A little optimistic perhaps, but Watercress is nutritionally impressive, and it thrives in the clean chalk streams around Tisbury. Gram for gram it has:

  • more vitamin C than oranges

  • more vitamin E than Broccoli

  • more calcium than cow’s milk

  • more folate than bananas.

  • It also contains beta carotene, a source of vitamin A, plus iodine, sulphur & iron

WHY WE LOVE WATERCRESS

It’s local, sustainable, and we get to visit the beautiful Chalke Valley Watercress beds in Broad Chalke to collect it. At Provenance you’ll find it in our takeaway salads, jars of salsa verde & on top of all our flatbreads.

FOOD FROM THE FARM GATE

You can visit them too, and for about £1.50 secure a big bag of watercress from their honesty box - much better than any supermarket salad.

It is hidden on a tiny lane ( circled above ) not somewhere you pass by accident, but part of a delightful walk if you have the time.

We recommend parking in Broad Chalke using the footpaths ( green dots on the map above ) & South Street where you’ll also pass a glorious house with very glamorous provenance.
